Ingredients

  • ¾ Cup Unsweetened Cocoa Powder
  • 1 ¼ Cup All Purpose Flour
  • ½ Teaspoon Salt
  • ¼ Teaspoon Baking Soda
  • 12 Tablespoons Butter 1 ½ Sticks
  • 2 Eggs
  • 1 ¼ Cups Brown Sugar Alternative Truvia or Splenda
  • 8 Ounce Sugar Free Chocolate Chips Hershey’s or Krogers
  • 1 Teaspoon Vanilla
  • 1 Cup Finely Chopped Walnuts Optional, Almonds, Pecans, Dried Cranberries, Raisins, or Dates are all good too

Method

  1. Preheat oven to 350º. Butter an 8×8 or 9×9 baking pan. Parchment paper placed inside will help the brownie cookie to not stick.
  2. In a medium bowl combine the unsweetened cocoa powder, the all-purpose flour, salt, and baking soda. Set this aside.
  3. In a microwave safe bowl, melt the butter. Add half of the chocolate chips and the vanilla; stir until chocolate has melted and combined with the butter. Set aside.
  4. In a mixing bowl, combine the eggs and brown sugar substitute. Add the melted chocolate and butter; combine stirring gently. Add the flour mixture and chopped nuts, a little at a time, stirring until well combined. Stir in the remaining chocolate chips.
  5. Press the stiff dough into the baking dish. Bake 8-10 minutes, until almost done. Remove from oven and let cool.
