Ingredients

  • 3 Tablespoons Orange Marmalade 100% Fruit
  • 2 Tablespoons Reduced-Sodium Soy Sauce
  • 1 Tablespoon Hoisin Sauce
  • 1 Tablespoon Freshly Grated Ginger
  • 1 Clove Garlic Minced
  • ¼ Cup Canola Oil
  • 1 Pound Lean Ground Beef
  • 6 Scallions Sliced
  • 3 Carrots Finely Chopped
  • 1 Red Bell Pepper Seeded and Finely Chopped
  • 12 Boston or Bibb Lettuce Leaves for Wrapping

Method

  1. Whisk together the marmalade, soy sauce, hoisin sauce, ginger and garlic in a small bowl and set aside.
  2. Heat the oil in a large skillet over medium-high heat. Stir together the ground beef, scallions, carrots and peppers, cooking for 5-7 minutes until the beef is browned and cooked through. Stir often. Add the soy sauce mixture and cook for an additional 5 minutes, stirring to make sure it is well blended.
  3. Spoon the mixture into the lettuce leaves and service, like a taco or a wrap.

This is one of my family’s favorite recipes.
